
These roasted root vegetables bring a delicious, colorful twist to your menu. Roast them in the solar oven and serve as a side dish, or follow this recipe for a hearty salad.
3 red beets, peeled and cubed
2 medium sweet potatoes, peeled and cubed
1T olive oil
lettuce or field greens dressed with vinaigrette dressing of your choice
crumbled goat cheese
whole pecans
Place the cubed beets and sweet potatoes in your Sport graniteware pot. Drizzle with olive oil and toss to coat. Cover the pot and place it in the Solavore Sport. Let cook for about 2 hours or until the potatoes and beets are fork tender.
Place dressed greens in a salad bowl and top with a portion of beets and potatoes. Top with crumbled goat cheese and sprinkle with pecans.
