Flourless Peanut Butter Chocolate Chip Cookies

2/3 cup old-fashioned rolled oats
1/2 teaspoon ground cinnamon
1 teaspoon vanilla
1 teaspoon baking soda
1 large egg
1 cup peanut butter 
6 Tablespoons packed light brown sugar
1/2 cup semi-sweet or dark chocolate chips

In a medium bowl, toss the oats, cinnamon, and baking soda together. In a separate bowl, beat the egg and vanilla together. Mix in the peanut butter and brown sugar with a large rubber spatula until combined. Pour in the dry ingredients and slowly mix until everything is combined. The dough gets very thick and somewhat crumbly. Fold in the chocolate chips.

Form cookies by squeezing the dough in to balls, then flatten the balls on to the pan/cookie sheet. I use black shallow pans that fit perfectly in the Sport (see picture). 

Place cookies in a preheated oven and bake for approximately 15 minutes. Let the cookies cool in the pans before removing them with a spatula.

Makes 14 cookies.
